I hope everyone is starting to feel festive & merry!! This time of year is so fun & special but it can become very overwhelming as well! One of the best ways to relax while doing something that makes you feel festive, is getting into the kitchen and cooking up some delicious holiday recipes!!
My good friend & editor of A Conscious Collection (@aconsciouscollection), Brooke Meredith is publishing 12 of her favourite Christmas time recipes for the 12 days of Christmas! Below are the three dishes I want to get stuck into!
Something sweet, something savoury & finally a great, healthy snack to cook up if you plan on entertaining over the summer.

1. WHITE CHOCOLATE GINGERBREAD TARTS by the very clever Liv Kaplan (@livinbondi)
WHAT YOU'LL NEED
Ingredients for the Base
- 2 cup raw almonds
- 2 tablespoon coconut oil
- 2 tablespoon rice malt syrup
- 1 tablespoon ground cinnamon
- 1 tablespoon ground ginger
- ¼ teaspoon ground cloves
- ¼ teaspoon ground nutmeg
- ½ teaspoon sea salt
Ingredients for the Filling
- 270ml coconut cream
- 35g cacao butter
- 10 drops liquid stevia
- 1 vanilla bean, seeds scraped
- Ingredients To Serve
- ¼ cup pistachios, crushed
- Fresh raspberries
2. LEMON, RICOTTA TOMATO SALAD by the health guru herself, Brooke Meredith (@aconsciouscollection)
WHAT YOU'LL NEED
Ingredients
- ¼ cup olive oil
- 1 tbs lemon juice
- 1 tbs lemon rind
- 1 tbs honey / rice malt syrup
- Pinch of salt
- Pinch of Pepper
- 1 punnet of Blush Perino Sweet Snacking Tomatoes
- 1 punnet of Blush Perino Gold™ Sweet Snacking Tomatoes
- 1 packet of Blush Amoroso Cocktail Truss Tomatoes
- 2 tbs chopped fresh basil
- 1 tbs fresh chives
- 200 grams fresh ricotta cheese.
- Twigs of thyme for garnish
